nummy PB Cookies..

tonight i made some peanut butter cookies, i think its the second time i’ve made them.. first time in the UK tho.. and guess what.. they’re diabetic-friendly!

ima post the recipe.. cos these are yum!!

alrighty.. ya need:

1/2 cup Peanut Butter
1/4 cup Vegetable Oil
1 cup Brown Sugar
1 tsp Vanilla Extract
1 large Egg
1 1/2 cup Whole-Wheat Flour (or less, i only used just over a cup)
2 tsp Baking Soda (Bicaronate of Soda)

Preheat ya oven to 350F (175C).

Cream together the peanut butter and vegetable oil in a bowl. The add brown sugar, vanilla and egg. Beat/stir well.

(Mixture consistency: thickishly sticky)

Add Flour (save 1/4 – 1/2 cup) and baking soda. Blend thoroughly. Add enough extra flour (if ya need to) so that you can shape dough into balls and place on an ungreased baking sheet.

(Mixture consistency: crumbly yet moist)

Makes 24 large / 36 medium / 48 small cookies.. size and quantity is completely upta you.. they’re very moresome! :)

Flatten with a fork, bake for roughly 10-15mins or until lightly browned.

Diabetic Exchanges:
1/24 recipe = 1 starch/bread + 1 fat exchange
96 calories, 2g protein, 13g carbohydrate, 4g fat, 89mg sodium.

..for a diabetic treat, they are very nummies! .. even DP loved them, ‘n he aint diabetic :D
